Sambar Recipe

Sambar is a very ancient south Indian recipe.It is a dal based vegetable stew,served usually with rice in both formal and everyday south Indian cuisine.Different variations of this recipe have been developed and adapted thoroughout southern India,mostly using toor dal,tamarind pulp,vegetables and spice mix.Taste differs depending on the selection of the vegetables and the spices used.Sambar is also served as a side dish with idly,dosai and vada for breakfast.

Vegetable Biryani

Vegetable Biryani

Preparation: 30 mts

Serves 2 persons

Ingredients:

1 cup Basmati Rice

1/2 cup mixed vegetables(carrots, green beans,peas,cauliflower,potatoes cut length wise)

1 medium onion chopped long

1/2  small tomatoe chopped

1 tbsp ginger garlic paste

1 tbsp green chilli paste

1/2 tsp garam masala

4 to 5 tbsp mint leaves

2 cups water

salt to taste

1/4 bunch corriander leaves chopped, to garnish

For Seasoning:

2 nos cardamom

2 cloves

1 bayleaf

1 inch thick cinnamon stick

3 tbsp oil

1 tbsp ghee

Vermicelli Kesari

Vermicelli Kesari

Preparation: 10-12 mts

Serves 3-4 persons

Ingredients:

1 cup vermicelli

1 cup sugar

1/2 cup milk

1 1/2 cups water

1/4 cup ghee

1 pinch cardamom powder

cashew nuts

a pinch of  food color
